seriously, these melt in your mouth cookies are the favorite sugar cookies I’ve found! These also are perfect for mini fruit pizzas..yum!!
I’ll get right to the recipe…
- 2 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cream of tarter
- 1 1/2 cups granulated sugar
- 1 cup unsalted butter, softened
- 1 large egg
- 1 large egg yolk
- 2 tsp vanilla extract
- Cream cheese frosting
- if using for fruit pizzas, these cookies are amazing on their own. This frosting is amazing.
- 5 Tbsp salted butter, softened
- 8 oz cream cheese, softened
- 2 cups powdered sugar
- 1/2 tsp vanilla extract
- To make the cookies… Preheat oven to 350 degrees. In a mixing bowl whisk together flour, baking soda, salt and cream of tartar for 20 seconds, set aside.
- In another bowl cream together sugar and butter until combined.
- Mix in egg, then mix in egg yolk and vanilla extract. Slowly add in dry ingredients and mix just until combined.
- Scoop out with cookie scoop or 1 1/2 Tbsp of dough. Roll into balls and place on cookie sheet, best on parchment paper 2 inches apart.
- Bake in preheated oven 10-12 minutes..Tip, cookies should appear slightly under baked and allow them to rest on the cookie sheet for a few minutes before moving to wire rack to cool.
- If using as fruit pizzas, cut up a variety of fruits….frost up the cookies and put the fruit on top.
